Hi,
We are going from Paris to the S. of France, but have an extra day. Money is an issue, but would like to know where we should stop by train to stay overnight in order to do wine tastings. However, we need to do it by walking, bus, or train. Should we just go directly to Juan Les Pins where we will be for two nights and travel around from there, or stay somewhere else for that extra day? Any suggestions?

You could stop in Avignon and tour the wineries around there. Chateauneuf-du-Pape is twenty minutes away. Here%26#39;s a link to a tour. We stayed at the B%26amp;B mentioned but toured on our own. The owners are charming and speak flawless English. http://www.bed-breakfast-provence.fr/

Breaking your journey will cost more money than just going straight to your final destination.
You only have two nights so I would go straight to JLP and enjoy the area around there.
